
WORLD VEGAN DAY: TOFU SCRAMBLE WITH VEGETABLES

INGREDIENTS
- ½ pack organic tofu
- ½ zucchini
- ½ eggplant
- 10 cherry tomatoes
- 1 small carrot
- ½ onion
- 1 clove garlic
- Olive oil
- 1 teaspoon turmeric
- Salt and pepper to taste
PREPARATION
- Cut the zucchini, carrot, tomatoes, and eggplant to your preferred size, opting for medium pieces.
- Cut the tofu into thick strips.
- Sauté the vegetables in olive oil with the chopped onion and garlic until browned in the pan.
- Add the carrot and leave until it starts to soften. If necessary, add a little hot water to help cook the carrot.
- Add the zucchini, eggplant, and tomatoes.
- When the vegetables are cooked, add the tofu.
- Season to taste and the dish is ready!
