WORLD VEGAN DAY: TOFU SCRAMBLE WITH VEGETABLES

The vegan movement is on the rise in Brazil. 14% of the Brazilian population identifies as vegan or vegetarian, according to Vegan Business.

Beyond health benefits, many people adopt vegan diets considering the significant environmental impact of meat production. Cattle ranching, for example, is one of the main contributors to a large portion of greenhouse gas emissions, excessive use of natural resources (such as water), and deforestation.

Thus, World Vegan Day is a perfect opportunity to celebrate this growing awareness and lifestyle. So, how about celebrating by preparing a vegan recipe?

INGREDIENTS

  • ½ pack organic tofu
  • ½ zucchini
  • ½ eggplant
  • 10 cherry tomatoes
  • 1 small carrot
  • ½ onion
  • 1 clove garlic
  • Olive oil
  • 1 teaspoon turmeric
  • Salt and pepper to taste

PREPARATION

  1. Cut the zucchini, carrot, tomatoes, and eggplant to your preferred size, opting for medium pieces.
  2. Cut the tofu into thick strips.
  3. Sauté the vegetables in olive oil with the chopped onion and garlic until browned in the pan.
  4. Add the carrot and leave until it starts to soften. If necessary, add a little hot water to help cook the carrot.
  5. Add the zucchini, eggplant, and tomatoes.
  6. When the vegetables are cooked, add the tofu.
  7. Season to taste and the dish is ready!
